His Masterpeice

We all admire the beautiful skies whether it be a sunrise that illuminates the beginning to a new day or a majestic sunset that paints the sky with hues of orange, yellow or reds! But reading this passage of scripture this morning, how many of us admires His true masterpiece? 

We are God’s masterpiece, His handiwork, created in His image and called with a purpose!

Rejoice!

So up bright and early this morning!!!

Last night, Dan and I organized “us.” I set everything out: made the girls lunches, they set out their uniforms, I knew exactly what I had to wear, book bags perfectly placed, Dan and I already planned for who was dropping off which girl, got our calendar up and organized for the month–I even had time to sit and just be! I was ready for today!!!

Then–the littlest decided to wake up and come in to our room this morning. Boom a change in the set schedule! Here we go–15 minutes before the alarm clock goes off— my feet hit the ground and it’s time to choose  how my day was going to play out. From the tears of crying about her socks, to brushing her teeth–I have to say outloud in my head today, “I will rejoice in this day!”  

It may not be exactly what we planned and our schedules definitely get out of whack sometimes but choose to rejoice! Let’s be honest guys, this morning could have definitely gone a very different way of me panicking, yelling, rushing down the road but by simply choosing to rejoice in this day and choosing peace, I even found time to write this blog to encourage others. Make it a great day friends–Rejoice!

Our Present Help


How many times do we pray asking the Lord to remove this problem or that problem? I know I do! We tend to think oh if we didn’t have this or that–life would be so much easier. But when I read the quote above, I thought, “wow, so true!” We don’t need the problem in our life to be removed every time–sometimes those same problems that bring us stress, grief or seems like the end of the world are meant to teach us something–help us grow or even somehow minister to others! 

Now I know it’s never easy as that but it is simple as that! We just tend to complicate the process instead of allowing Him to do what He does. Psalm 46:1 tells us, “God is our ever present help in times of trouble.” Hang on to those words today! Let Him help you find a way through your struggles victoriously! 

Pesky Mosquitoes

Summer is practically here! Summer cookouts, picnics, beach and pool days, going for walks, taking the kids to the playground and the list goes on!  But one thing that can put a halt to all that fun are those itchy, pesky bugs that attach themselves to you and before you can even think to swat at them, more than likely they have already started to feed on your blood!  Yes, I’m talking about the dreaded “mosquito!”
My girls and I were headed out for a walk a few days ago as our plan was to get in some exercise while spending some time together and our local news station approached us randomly to interview us on nonetheless: Mosquitoes in our area! That definitely inspired this post and you can find the news clip below.


They come out of nowhere–the bites itch at night and they keep popping up here and there and everywhere! So what are some ways to make prevent these bug bites?

Here are a few tips I found that works and some that I will be trying throughout the summer:

  • Bug Repellant Spray: Spray liberally before heading outdoors!
  • DynaTrap: this has been a life saver for us! This device emits UV light to lure the mosquitoes in.  After a week or so, check and empty the device.
  • Grow your own mosquito repelling plants (citronella, catnip, basil, peppermint)
    You can crush these leaves and rub the oils on your skin–the natural oils they emit will keep these bugs at bay!
  • Get rid of any standing water in the outdoor areas. (make sure gutters are not clogged so that the water can drain freely from the top of your house) Mosquitos thrive and reproduce in warm, humid and dark areas.
  • Refrain from wearing heavy perfume/cologne or scented body lotions–the sweet smell attracts mosquitos.

How to STOP the itch?

  • Apply apple cider vinegar to bug bites to help stop the itching.
  • Vicks Vapor rub is said to ease the itching. (definitely helps)
  • Honey to soothe the area.
  • Banana peel–rub the inside on the bite for a few minutes.
  • Peppermint oil–a dab on the bite and it relieves the itchiness (TRUTH)
  • Rubbing Alcohol–the cooling effect of the alcohol immediately soothes the bite, reduces the size and swelling. (works for me)

Preschooler Learning in the Kitchen

Our almost 3 year old was up earlier than her two older sisters this morning…so she and I decided to make breakfast together. A little one-on-one time with just mommy  and some added fun with learning, that mommy totally snuck in! 

Who says making pancakes can’t get a preschooler’s mind going?! 

She got introduced to measurements, a review in shapes/colors and there’s lots of fine motor being used! 

What are some fun ways you are keeping your preschooler’s mind busy this summer?

Avocado & Chicken Caprese Salad…


2 cups Romaine lettuce
1/2 cup Cherry tomatoes, halved

1/8 Avocado, chopped

2 oz. Fresh mozzarella, chopped

4 oz. Chicken breasts, chopped (I used garlic salt & pepper-seasoned, sauteed chicken breasts)

Fresh torn basil

Walden farms Balsamic 

1 full lean and green, 1 healthy fat and 3 condiments

This is so true for Daniel and I, especially as we approach our 2 year mark of stepping out of the boat–our comfort zone! God has seen us through SO much in the past 2 years and we stand so much stronger in Him! We both can attest to “He never leaves you and never forsakes you.” There is always a Bigger Plan–trust Him!

Lean and Green Cauliflower Crust Pizza

Food that fuel your body!!!


Ingredients:

1 cup shredded Riced cauliflower 

1 large egg

1 cup low fat mozzarella

1/2 tsp. garlic powder

1/2 tsp. black pepper

1 Tablespoon pizza sauce (find a brand and amount that will give the largest serving size while providing 1 gram of carbohydrate or less). 

Directions: 

1. Preheat oven to 450 degrees

2. Add Riced cauliflower to a bowl and allow to sit for 10 min. Drain excess water using cheese cloth or paper towel. (the more moisture you can get out the crispier the crust will be)

3. Add cauliflower, egg, 1/2 cup mozzarella, garlic powder, and black pepper into the bowl and mix to combine.

4. Lay out parchment paper on pizza stone and spread cauliflower mixture into a circle.

5. Bake 20 minutes, remove from oven, add pizza sauce & the other 1/2 cup mozzarella.

6. Return to oven for another 5-10 min

7. Allow to cool for a few minutes before slicing
8. Enjoy

Tip: use the cauliflower rice that can be found in most produce aisle already made! Saves you some time!
