Jalepeño Poppers


Prep time: 10 minutes

Cook Time: 20-25 minutes

Yield: 2 servings. Per serving: 1 Leaner | 3 Green | 1½ Condiments

Ingredients

Cooking spray

4 oz 95-97% lean ground beef or turkey

6 whole jalapeno peppers

4 oz (½ cup) low-fat plain Greek yogurt

4 oz (1 cup) shredded reduced-fat sharp cheddar cheese

3 medium scallions, sliced thin

1 large red bell pepper, diced fine

¼ tsp garlic powder

¼ tsp cumin

¼ tsp chili powder

1/8 tsp paprika

Directions:

1. Preheat oven to 350° F. Lightly grease a baking sheet and set aside.

2. Cook ground beef/turkey in a non-stick pan over medium-high heat until done. Set aside.

3. Cut jalapeno peppers in half lengthwise. Remove seeds and membrane.

4. Combine meat, yogurt, cheese, scallions, red pepper, and spices in a medium bowl.

5. With a spoon, fill jalapeno pepper halves with cheese mixture.

6. Place the peppers, cut-side up, on the prepared baking sheet. Bake for about 20-25 minutes or until golden brown.

Avocado & Chicken Caprese Salad…


2 cups Romaine lettuce
1/2 cup Cherry tomatoes, halved

1/8 Avocado, chopped

2 oz. Fresh mozzarella, chopped

4 oz. Chicken breasts, chopped (I used garlic salt & pepper-seasoned, sauteed chicken breasts)

Fresh torn basil

Walden farms Balsamic 

1 full lean and green, 1 healthy fat and 3 condiments

How it all began for me:
Writing has been something that has had a special place in my heart since I was very young but I just never really thought of pursuing it.  Two years ago I started my first blog post with the encouragement of my husband to document our adventure as we were heading into full time ministry. I rose to the challenge and found that my posts were geared to young moms who were trying to figure out this thing called, “motherhood.” As I started blogging more frequently I just felt in my heart that if my writings could inspire or encourage any and all readers then I felt this was what I’m meant to do for this season of my life.
This past year I have also started to write for Mami of Multiples as Tampa Bays Contributing Columnist.  Check out this site to learn more on product reviews, Disney insider information, recipes and other family friendly topics.

Take a Closer Look

Let me say right off the bat–I did NOT want to write about this, much less, add the photo you see.  Uggh!  But I do try to keep things real on here so here we go.
Last year in April, I shared  with you all about my struggle in losing the baby weight.  I have a love for running and since we were moving from Virginia, I had signed back up to run a 10k (6.2 miles) that had kicked my butt the year before.(The Struggle is Real)
So the other day, a good friend of mine emailed me asking about that race and saying she saw a picture of me as I was running. I read on as my friend writes, “Oh the picture is part of a calendar and it’s all over Fairfax County offices and Rec Centers!” Umm..lets just say it’s not my most flattering picture and definitely one that I didn’t want circulating.

When I first glanced at this picture all I could see was the baby weight I still needed to lose, my form falling apart, the runner ahead of me smiling from ear to ear,(I really don’t know what she’s smiling at, we still had like 2 more miles to go) me holding in my breath or maybe me struggling to catch my breath BUT take a closer looka picture is worth a thousand words, isn’t it?
See when I look at myself in this photograph, not just the outward appearance I tend to cringe at, I see on my face:  Determination, Focus, Endurance, Purpose drivenI would have much, much rather the moment captured with me in all smiles and two thumbs up as I gracefully jogged by the photographer. But that wasn’t my race.
So why did I choose to post a picture that I find unflattering?  Well it’s proof!
It’s proof to me and anyone reading, while I wasn’t looking my best in that particular moment– that moment is still defined in a way to push me to my next level.  This moment that I once cringed is a moment I can now be proud of.

What moment in your life have you cringed?
Have you come across your old photos, old videos or even memories where you think, uggh!  Take a closer look, remind yourself what you were fighting for, remind yourself of that goal, remind yourself of your focus–let that image propel you to your next level!

 

 

 

Time For a Checkup (One Word)

Back in January I challenged myself and my readers to come up with One Word to work on this year.  The idea was instead of having a “to do” list of resolutions, we would focus in on One WordMy word was peaceful.
So  how am I doing with keeping in peace, having peaceful relationships, and being filled in His perfect peace when things don’t work out exactly as planned?  Let’s just say, I sure am glad we have nine more months in this year!
The very day I posted and declared to you that my word was peace, I remember cooking enchiladas for dinner.  It was super easy to do but in my midst of balancing cooking, homework, supervising bath time, answering questions thrown at me left and right–I set the glass dish on a very hot stove and before long–glass shattered–sauce spattered and tears welled up in my eyes due to the overwhelming glob of red sauce and cheese everywhere!  The girls were already complaining of being hungry, hubby was on his way home and I was on top of everything until our dinner collapsed.  I thought, “peace!” Here was my first chance at demonstrating peace. Dan walks in from work and his comment, “well if you wanted Chinese for dinner, just say so!”  We both laughed but choosing peace even though in a silly situation turned into a fun evening instead of me being stressed out.
In the last three months, I have been challenged to my breaking point.  There is no coincidence why my word is PEACE!  I have realized that choosing to have peace, means choosing to continue to trust  in God, to continue to depend on Him when all things don’t seem to make sense and to continue to be true to who He created me to be.(Be You) I have gone through betrayal, mistrust, hurt, anger, frustration but when my focus is on PEACE–I have been able to forgive, love, trust, enjoy the season I am in and show compassion to those that have wronged me.
I am a work in progress for sure and everyday it is a choice to make.  The verse I cling to is found in John 14:27–Peace I leave with you; my peace I give you. I do not give to you as the world gives. Do not let your hearts be troubled and do not be afraid.

My New Gig

img_0632As many of you have probably seen by now I have taken on a new title!  I am very excited and happy to announce that I am the newest contributing columnist to one of the nation’s recognized Latina American parenting and lifestyle sites, Mami of Multiples.  I will be offering advice, tips and resources on family-friendly topics like faith, family and home.  Please head on over and check it out–there are so many helpful resources.

So how did this all happen for me?  Well my story goes back to a couple of years ago when we were still living in VA.  Dan and I were driving to Virginia Beach which is quite a hike for us and trust me when I say, there was always traffic so we would end up talking about everything under the sun. You know those deep convos of sharing where you are in life, your dreams, your desires…well anyway that was what we did to help pass the time on the road.  I clearly remember sharing with him that I felt a bit consumed by the girls.  I didn’t have anything that said “Shivaulie!”  I wanted my own identity. I didn’t just want to be Dan’s wife,  Alyssa and Alaina’s mom at the time, I wanted to reach people and not just in my circle, I wanted to inspire/encourage others.  Now don’t get me wrong, I do love being a wife and a mommy but I knew “Shivaulie” needed her very own outlet too.  He asked me what is one thing that I would love to do but feel like I couldn’t do because it seemed way too big for me? I thought about it and seriously I didn’t even want to say it out loud because I knew he was going to make me accountable for it.  He quietly waited for my answer and I said, ” I would love to write a book one day!” Dan already knew I was going to say that but it’s something else when you hear yourself say it out loud, isn’t it?

We did what we always do, “Commit to the Lord whatever you do and He will establish your plans.” (Proverbs 16:3)  It wasn’t until February of last year that I decided to start blogging.  It didn’t matter to me how many people read it–I was so excited that I was I writing–I had my outlet!  It was an answered prayer. Then the messages came in on how I was that encouragement/inspiration to others through my posts.  Another answered prayer!  Well which brings me back to my recent gig: now a contributing columnist for such a well-known and reputable site, which means I will be reaching all sorts of people from all over the world–not just my circle!  Another answered prayer!

So here’s my question to you:  What is the one thing that you would love to do but feel like you can’t do because it seems too big for you? Say it out loud, hear yourself speak life into it, commit it to the Lord, and work towards it.

Blogiversary!

Today’s marks h2owalkerlife 1 year anniversary! Time surely does fly by. Thank you all for supporting and encouraging me this past year as I shared my thoughts/ feelings and my family’s ups and downs with you! What a blessing you all have been to me. I pray that in my writings you find encouragement and your spirits are lifted!

Here are the 11 random facts about me and the 11 questions I was asked.
1.  Dan and I have the exact same beauty mark, on the exact same hand, on the exact same spot! (Totally meant to be-HA)
2.  I line everything up, the shampoo bottles, the cups in the cupboard, nail polish, lotion, anything!  Nope not OCD but I feel more organized with certain things in a row.
3.  I skipped the 4th grade when we moved to America. Kinda looking forward to my oldest heading into 4th grade next fall so I can see what I missed.
4.  I have a secret talent of people opening up to me about any and everything.  But I embrace this because I love listening and helping others.
5.  I love avocados and became allergic to it–was a huge bummer!  I had my first kid and could eat them again!  Yayyy
6.  Snickers–my all time weakness.
7.  I want to write a book sooner than later.
8.  Thai food is my favorite.
9.  I actually enjoy running when I’m actually doing it.
10. I love shoes with heels but after three kids, I never thought I would go for comfort and convenience over my heels.
11.  I somehow can not take a sip from a soda bottle while driving because I don’t want to spill!

1. If you could travel anywhere, where would it be?  Italy
2.  What is your favorite book?   Can I say Dr. Seuss or Junie B. Jones–I feel like my energy goes into that most nights. Besides with three little ones I tend to fall asleep after a few pages into a book!
3. If you could buy anything no matter the cost, what would it be? Endless monthly  massage sessions!
4. What is your favorite thing to do? Currently–exploring new places with my family.
5.  Outside or inside person? Outside for sure
6.  What is something you would love to learn to do? Fly a plane.
7.  If you could change one thing about your life what would it be? This year I decided to work on remaining in “peace.”
8.  Who is your hero?  The proverbs 31 woman–I don’t know how she did it!
9.  What is your favorite television show?  Hawaii 5-0 bc hubby and I reminisce of when we went and it’s just gorgeous to look at the scenery.
10. Coffee or tea? I drink both but not a fanatic with either

Here’s to 2016

December 31st and as we all look back through the days and months of all we did and didn’t accomplish this year–I’m personally challenged to focus on all the “good” I was blessed with in 2015. It’s far too easy to focus on all the “I should haves,” “I could haves,” or the “I wish I had”! For a few moments I extend a challenge to you to stop focusing on all those statements but rather think on all the blessings that did happen throughout 2015! You might find that there were more “good” in 2015 than you even realize.                                   

  Here’s to a 2016 filled with love, joy, peace and prosperity!
