Chicken Fajita Salad

Per Serving: 1 leaner, 1 healthy fat, 3 green, and ~3 condiments

Pam spray

1 lb raw boneless skinless chicken breast

1 medium red bell pepper, thinly sliced

1 medium yellow bell pepper, thinly sliced

¼ teaspoon salt

½ teaspoon chili powder

½ teaspoon cumin

¼ teaspoon garlic powder

2 teaspoons olive or canola oil

2 tablespoons lime juice

¼ teaspoon chili flakes

3 cups chopped romaine lettuce

1.5 oz sliced avocado


Heat pam in a pan over medium-high heat. Cook the chicken, bell peppers, onion, salt, chili powder, cumin, and garlic powder for five minutes, stirring constantly. Flip the chicken, and cook for another five minutes, until chicken is cooked and vegetables are slightly soft. Remove from heat and slice the chicken into strips.

In a small bowl, combine the olive oil, lime juice,splenda, chili, and salt, stirring until evenly mixed.

In a large bowl, toss the romaine lettuce with the chicken, peppers & onions, avocado, and dressing. Serve!

Jalepeño Poppers

Prep time: 10 minutes

Cook Time: 20-25 minutes

Yield: 2 servings. Per serving: 1 Leaner | 3 Green | 1½ Condiments


Cooking spray

4 oz 95-97% lean ground beef or turkey

6 whole jalapeno peppers

4 oz (½ cup) low-fat plain Greek yogurt

4 oz (1 cup) shredded reduced-fat sharp cheddar cheese

3 medium scallions, sliced thin

1 large red bell pepper, diced fine

¼ tsp garlic powder

¼ tsp cumin

¼ tsp chili powder

1/8 tsp paprika


1. Preheat oven to 350° F. Lightly grease a baking sheet and set aside.

2. Cook ground beef/turkey in a non-stick pan over medium-high heat until done. Set aside.

3. Cut jalapeno peppers in half lengthwise. Remove seeds and membrane.

4. Combine meat, yogurt, cheese, scallions, red pepper, and spices in a medium bowl.

5. With a spoon, fill jalapeno pepper halves with cheese mixture.

6. Place the peppers, cut-side up, on the prepared baking sheet. Bake for about 20-25 minutes or until golden brown.

Avocado & Chicken Caprese Salad…

2 cups Romaine lettuce
1/2 cup Cherry tomatoes, halved

1/8 Avocado, chopped

2 oz. Fresh mozzarella, chopped

4 oz. Chicken breasts, chopped (I used garlic salt & pepper-seasoned, sauteed chicken breasts)

Fresh torn basil

Walden farms Balsamic 

1 full lean and green, 1 healthy fat and 3 condiments

How it all began for me:
Writing has been something that has had a special place in my heart since I was very young but I just never really thought of pursuing it.  Two years ago I started my first blog post with the encouragement of my husband to document our adventure as we were heading into full time ministry. I rose to the challenge and found that my posts were geared to young moms who were trying to figure out this thing called, “motherhood.” As I started blogging more frequently I just felt in my heart that if my writings could inspire or encourage any and all readers then I felt this was what I’m meant to do for this season of my life.
This past year I have also started to write for Mami of Multiples as Tampa Bays Contributing Columnist.  Check out this site to learn more on product reviews, Disney insider information, recipes and other family friendly topics.

Take a Closer Look

Let me say right off the bat–I did NOT want to write about this, much less, add the photo you see.  Uggh!  But I do try to keep things real on here so here we go.
Last year in April, I shared  with you all about my struggle in losing the baby weight.  I have a love for running and since we were moving from Virginia, I had signed back up to run a 10k (6.2 miles) that had kicked my butt the year before.(The Struggle is Real)
So the other day, a good friend of mine emailed me asking about that race and saying she saw a picture of me as I was running. I read on as my friend writes, “Oh the picture is part of a calendar and it’s all over Fairfax County offices and Rec Centers!” Umm..lets just say it’s not my most flattering picture and definitely one that I didn’t want circulating.

When I first glanced at this picture all I could see was the baby weight I still needed to lose, my form falling apart, the runner ahead of me smiling from ear to ear,(I really don’t know what she’s smiling at, we still had like 2 more miles to go) me holding in my breath or maybe me struggling to catch my breath BUT take a closer looka picture is worth a thousand words, isn’t it?
See when I look at myself in this photograph, not just the outward appearance I tend to cringe at, I see on my face:  Determination, Focus, Endurance, Purpose drivenI would have much, much rather the moment captured with me in all smiles and two thumbs up as I gracefully jogged by the photographer. But that wasn’t my race.
So why did I choose to post a picture that I find unflattering?  Well it’s proof!
It’s proof to me and anyone reading, while I wasn’t looking my best in that particular moment– that moment is still defined in a way to push me to my next level.  This moment that I once cringed is a moment I can now be proud of.

What moment in your life have you cringed?
Have you come across your old photos, old videos or even memories where you think, uggh!  Take a closer look, remind yourself what you were fighting for, remind yourself of that goal, remind yourself of your focus–let that image propel you to your next level!




Time For a Checkup (One Word)

Back in January I challenged myself and my readers to come up with One Word to work on this year.  The idea was instead of having a “to do” list of resolutions, we would focus in on One WordMy word was peaceful.
So  how am I doing with keeping in peace, having peaceful relationships, and being filled in His perfect peace when things don’t work out exactly as planned?  Let’s just say, I sure am glad we have nine more months in this year!
The very day I posted and declared to you that my word was peace, I remember cooking enchiladas for dinner.  It was super easy to do but in my midst of balancing cooking, homework, supervising bath time, answering questions thrown at me left and right–I set the glass dish on a very hot stove and before long–glass shattered–sauce spattered and tears welled up in my eyes due to the overwhelming glob of red sauce and cheese everywhere!  The girls were already complaining of being hungry, hubby was on his way home and I was on top of everything until our dinner collapsed.  I thought, “peace!” Here was my first chance at demonstrating peace. Dan walks in from work and his comment, “well if you wanted Chinese for dinner, just say so!”  We both laughed but choosing peace even though in a silly situation turned into a fun evening instead of me being stressed out.
In the last three months, I have been challenged to my breaking point.  There is no coincidence why my word is PEACE!  I have realized that choosing to have peace, means choosing to continue to trust  in God, to continue to depend on Him when all things don’t seem to make sense and to continue to be true to who He created me to be.(Be You) I have gone through betrayal, mistrust, hurt, anger, frustration but when my focus is on PEACE–I have been able to forgive, love, trust, enjoy the season I am in and show compassion to those that have wronged me.
I am a work in progress for sure and everyday it is a choice to make.  The verse I cling to is found in John 14:27–Peace I leave with you; my peace I give you. I do not give to you as the world gives. Do not let your hearts be troubled and do not be afraid.
